Soil : Clay and silt, slight slope
Exposure : South
Average age of vines : 50 years
Surface area : 0,90 ha on the land “les Crêts Carterots” 
Responsible farming : observing before acting, limiting insecticides and fertilisers, working the land, bud pruning…


Vinification :

Pneumatic pressing, light racking must at low temperatures.
Starting the fermentation in the vat, running off in barrels at the end of fermentation.  Maturing on fine sediments with stirring until bottling.
Racking, light filtration for bottling before hot summer days.


Tasting :

The pretty pale gold colour is shiny.  An elegant, intense fragrance of violet and dried apricot.  Touches of vanilla and liquorice reinforce its complexity.  The feel in the mouth combines tonicity and smoothness.  All in a remarkable freshness.  You can find the flavours of the fragrance, completed by notes of dried fruits.

Service: 12-14°C Don’t hesitate to let it breathe for a few minutes to let it express itself fully


Wine pairing :

It will be a wonderful accompaniment to a pretty plate of scallops, a Bresse chicken in cream and morel or a nice foie gras.


Preservation :

Perfect from today, it will accompany you for another 2 to 3 years.
